Have you ever pondered the remarkable popularity of food delivery services like Swiggy, Zomato, and others? One prominent reason that springs to mind is the sheer convenience they offer. People often opt for food delivery not only for the delight of ordering but primarily because it brings cooked meals right to their doorsteps. Let’s face it, sometimes we avoid cooking due to its time-consuming nature. Interestingly, it’s not just about the impatience to wait for food to be delivered, as that takes roughly 30-45 minutes anyway. Instead, it’s the desire to avoid the lengthy process of cooking itself. But what if you get some quick recipes which can be prepared in no time?

However, isn’t homemade food the best? Indeed, it is, not only in terms of taste but also for its health benefits. Hence, I’ve come up with a selection of recipes that can be prepared in a mere 15 minutes without any cumbersome preparation. By incorporating a little planning, you can enjoy delicious, healthy, and homemade meals without investing much of your time. I usually turn to these quick and easy recipes when my schedule gets busy, and I find myself short on time for cooking.

Quick Recipes – 1

Quick Tomato Oats Recipe

This delightful recipe requires just a handful of ingredients and can be prepared in a mere 15 minutes!

Ingredients:

  • 250g Rolled Oats (Our Healthy base)
  • 1 tbsp Roasted Peanuts (for a satisfying crunch)
  • 2 Tomatoes (for a tangy twist)
  • 8-10 Curry leaves (for the vibrant green colour and numerous benefits)
  • 1/2 Green Chilly (for an extra kick of spice)
  • 1 tsp Mustard Seeds (for a delightful crackling sound)
  • Salt (to taste)
  • 1 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Red Chilly Powder
  • 1 tsp Black Pepper Powder (for a hint of spiciness)
  • 1 tbsp Mustard Oil (for an amazing flavour)
  • 1/2 Lemon (because I like it ;))
  • 500 ml Water (for cooking)

Method:

  1. Heat some oil in a pan.
  2. Once the oil is hot, add mustard seeds and let them splutter.
  3. Add curry leaves and green chilly.
  4. Add tomatoes and cook on a medium flame for 2-3 minutes until they become soft.
  5. Stir in the roasted peanuts and cook for a few seconds.
  6. Add all the spices except the black pepper powder. Use 1/2 tsp of salt at this stage and save the rest for later.
  7. Mix everything well. Now add the oats and cook for 2 minutes.
  8. Add the remaining salt and black pepper powder, and thoroughly combine.
  9. Gradually add water while stirring continuously. Cook for 4-5 minutes until the mixture thickens to a slurry consistency.
  10. Turn off the flame and add lemon juice, mixing it in.
  11. Your delicious Masala Oats are now ready to be served. Enjoy it hot, and if you prefer, garnish with fresh coriander leaves or simply savour it as it is.

Quick Wholesome Vegetable Soup Recipe

This easy recipe requires washing and roughly chopping the veggies, followed by pressure cooking for 2-3 whistles. Then, simply grind, strain, and your comforting soup is ready!

Ingredients:

  • 4 Tomatoes
  • 1 Onion
  • 1 Carrot
  • 1 slice of Raw Papaya
  • 1 slice of Ash Gourd
  • 1/2 inch Ginger
  • 3-4 Garlic cloves
  • Any available green leafy vegetable
  • Stem of Coriander leaves
  • 1/2 Beetroot
  • Salt
  • Black Pepper Powder

Instructions:

  1. Wash and roughly chop all the vegetables.
  2. In a pressure cooker, add the chopped vegetables and 1/2 glass of water.
  3. Pressure cook the vegetables for 2-3 whistles.
  4. Once done, allow the pressure cooker to cool down.
  5. Using a hand blender, grind the boiled vegetables to form a puree.
  6. Use a strainer to strain the vegetable puree, ensuring a smooth consistency.
  7. Heat the strained soup, and it’s ready to be served.
  8. Enjoy your nutritious Vegetable Soup with a slice of bread for a delightful and wholesome meal.

Creamy Vegetable Sandwich

A delectable recipe that brings together finely chopped onions, grated carrots, chopped capsicum, tomatoes, mint, and coriander leaves, combined with the richness of fresh cream. Seasoned with salt, black pepper powder, and oregano, this sandwich is perfect for a delightful treat!

Ingredients:

  • 2 finely chopped Onions
  • 2 grated Carrots
  • 1 finely chopped Capsicum
  • 2 finely chopped Tomatoes
  • A handful of chopped Mint and Coriander leaves
  • 2 tbsp Fresh Cream (Beaten)
  • 1 tsp Salt
  • 1 tsp Black Pepper Powder
  • 1 tbsp Oregano
  • Brown/White Bread slices
  • Butter
  • Sesame Seeds
  • *Optional: Spring Onion

Method:

  1. In a mixing bowl, combine finely chopped onions, grated carrots, finely chopped capsicum, and finely chopped tomatoes.
  2. Add a handful of chopped mint and coriander leaves to the bowl.
  3. Pour the beaten fresh cream into the mixture and mix everything thoroughly.
  4. Season the mixture with salt, black pepper powder, and oregano. Adjust the seasoning according to your taste.
  5. If desired, you can also add chopped spring onions to enhance the flavour.
  6. Take bread slices and spread butter on one side of each slice.
  7. On the buttered side of one bread slice, evenly spread the vegetable and cream mixture.
  8. Place another bread slice, buttered side down, on top of the filling to create a sandwich.
  9. Press gently to bind the slices together.
  10. Optionally, you can sprinkle sesame seeds on the outer side of the sandwich for added crunch and flavour.
  11. Heat a sandwich maker or a pan over medium heat.
  12. Place the prepared sandwich in the sandwich maker or pan and cook until both sides turn golden brown and crispy.
  13. Once cooked, remove the sandwich from the heat and let it cool slightly before serving.
