Bored of giving Rice, Chapatis, Macaroni and Pasta in the lunch box? So am I and this is what I did to make the lunch box interesting for my kid today. Well, its monsoon and it is just not possible to avoid deep fried pakodas and puris at this time. So I made these delicious Ajwain Puris with Jhatpat Aloo ki Subji for my kid today. He was so excited that he woke up with the smell of it and also without any Monday Blues. He loves puris so much that he even had few hot puris for his breakfast. Well, for his breakfast I made multigrain flour Puris which was crispier that the ajwain ones. And yes nothing can be more satisfying than these hot puris on a cold Monday morning. I also fried some finger frams for his snacks. 

So let us quickly jump to the recipe.

For Lunch Ajwain Puri Roll with Jhatpat aloo ki subji and jaggery piece

For Ajwain Puris

  • Wheat Flour – 1 Cup
  • Ghee – 1 tbsp
  • Salt – 1/2 tsp
  • Ajwain (crushed with hand) – 1 tsp
  • Water as needed
  • Oil for frying
  • In a mixing bowl, take all the ingredients and knead a stiff and tight dough for puris.
  • Drizzle a little ghee and knead lightly to smoothen the prepared dough. Do not knead it for long as it is not required to be soft like chapati dough.
  • Press it with your finger, it should still be tight and stiff.
  • Cover and rest the dough for 5-10 minutes.
  • Now, divide it into equal parts and start rolling.
  • Apply a little oil on the rolling pin for easy rolling of the puris.
  • Do not roll it too thin. It should be moderately thick so it can puff.
  • Roll out 5-6 puris and then start frying.
  • Heat the oil on medium flame. Check whether it is hot or not by putting a small ball from the dough.
  • Once, it is hot start frying the puris. Gently keep pressing the puris when in oil so that it puffs properly. Flip and cook on other side. Now remove it and keep it on a plate covered with tissue paper. This will help in absorbing the excess oil.
  • Make sure that the oil is not smoking hot else the puris will become brown.

For Jhatpat Aloo

  • Mustard Oil – 1 tbsp
  • Cumin Seeds or Jeera – 1 tsp
  • Garlic (finely chopped) – 1tsp
  • Turmeric Powder – 1 tsp
  • Red Chilli Powder/Dried Red Chilly (as per taste and availability)
  • Salt to taste
  • Boiled Potatoes – 3
  • Coriander leaves a handful
  • Lemon Juice – 1/2 tsp
  • In a wok, heat mustard oil on a low flame.
  • Once it is hot, add cumin seeds. Add garlic, when the cumin seeds crackle.
  • Add turmeric powder, red chilly and cook the spices for a minute.
  • Cut the boiled potatoes into cubes or just mash them and add it.
  • Add salt, coriander leaves and mix well.
  • Switch off the flame and add lemon juice.
  • Mix everything well.

Spread this delicious Jhatpat Aloo on the puris and make rolls out of it. Serve it for your kids lunch box and let them enjoy their food. I gave him a piece of jaggery with ghee for his sweet tooth and also because it helps in digestion.
