For Snacks – Handful of Blueberries and Cranberries and Mini Pancakes
Mini Pancakes Recipe:
- Wheat Flour – 2 tbsp
- Jaggery Powder – 1 tbsp
- A pinch of Salt
- Ghee/Clarifies Butter – 1 tsp and for drizzling
- Water for making the batter
- In a bowl add all the ingredients except water.
- Give everything a good mix. Then gently add water and make a smooth, runny batter for the pancakes.
- Let the batter rest for 5-10 minutes.
- Head a griddle, and grease it with a few drops of ghee. Keep it on a medium flame.
- Pour 1 tbsp of the batter. You can make 5-6 mini pancakes at once.
- Let it cook and then drizzle some ghee on top.
- Flip and cook on the other side.
- Once it is golden brown in colour, it is ready to go in the tiffin box.
For Lunch Vegetable Pasta with some extra cheese
- Penne Pasta (made of Durum Wheat) – 1 cup (boiled)
- Garlic (minced) – 2 cloves
- Onion (peeled and finely chopped – 1 (small)
- Carrot (peeled and finely chopped – 1 (small)
- Corn kernels – a handfull (boiled)
- Tomatoes (peeled and finely chopped) – 2 (small)
- Tomato ketchup – 1 tbsp
- Coriander Leaves (finely chopped) – for garnishing
- Cheese Slice – 1
- Salt to taste
- Black pepper powder – 1/2 tsp
- Oregano – 1 tsp
- Olive Oil – 1 tbsp
- In a large vessel, boil 2 cups of water with a little salt and a few drops of olive oil.
- Once the water is boiling, add penne pasta and cook till it is soft. If you want, you can also add corn kernels to it and carrot to it. (This will help in fast cooking of the veggies).
- Or you can boil the veggies separately. Make sure that they are not too soft and mushy.
- Heat a pan and add olive oil. Once it is hot, add minced garlic and Onion.
- Sauté and then add the boiled veggies. Give a good toss.
- Then add tomatoes and cook everything on a medium flame.
- Do not overcook. Add salt, black pepper powder and oregano along with the tomato ketchup.
- Give it a good stir. And add the boiled pasta.
- Sprinkle a little salt and oregano along with the coriander leaves.
- Toss everything and the Pasta is ready. If you think it is little dry for your kid, add some ketchup.
- Now it is ready to be packed. Once you have loaded all the pasta in the box, adda slice of cheese to it.
- Pack it with love for your kids and let them enjoy some healthy and nutritious food.
