My son came all elated with the tiffin that I gave him today (Friday) and something which stood out for him was the “CoCu Salad”. So, I could just not resist myself from sharing this healthy recipe with all you folks out there through this quick blog. 

A box of CoCu Salad

  • Sweet Corn (Boiled) – 1 cup
  • Cucumber (finely diced) – 1
  • Hung Curd – 2 tbsp
  • Coriander leaves/Mint leaves – a handful
  • Salt to taste
  • Black Salt – 1/2 tsp
  • Black Pepper Powder – 1/2 tsp
  • In a big bowl take hung curd, salt, black salt and black pepper and whisk them together.
  • Then add boiled sweet corn, cucumber and coriander/mint leaves.
  • Gently mix everything and it is ready.

Note:

*The above measurement easily serves 3 people.

*You can also add finely chopped green chillies if you want it spicy.

*You can also add finely diced onion if you are having it instantly. I don’t like to put raw onion in tiffin because of the pungent smell.

For Lunch Tomato RIce

  • Mustard Oil – 1 tbsp
  • Cumin Seeds – 1 tsp
  • Fresh Ginger Garlic Paste – 1 tsp
  • Asafoetida – 1/4 tsp
  • Onion (finely chopped) – 1 {optional}
  • Tomatoes (finely chopped) – 3
  • Salt to taste
  • Turmeric Powder – 1 tsp
  • Red Chilli Powder – 1/2 tsp (or as required)
  • Coriander Powder – 1 tsp
  • Roasted Cumin Powder – 1/2 tsp
  • Garam Masala – 1/2 tsp
  • Rice – 1 cup 
  • Coriander leaves – a handful
  • Wash and rinse the rice thoroughly and use a pot to boil it with enough water and 1 tsp salt.
  • In a pan, heat oil and once it is hot, lower the flame and add cumin seeds.
  • Once it crackles add ginger garlic paste and asafoetida.
  • Then add onion and cook for a while.
  • Once the onion is pinkish in colour, add all the spices except garam masala.
  • Cook all the spices and then add tomatoes. I peel the tomatoes and then chop it.
  • Once the tomatoes are a little mushy, add coriander leaves.
  • Mix well and then add the boiled rice and garam masala.
  • Gently mix everything and tan ta da the Tomato Rice is ready.
