New Week New Recipes and New Tiffin Ideas. I am someone who gets really bored of cooking the same thing again and again and so bringing in some more recipes with a little twist. Seeing my interest in doing recipe innovation, my son is also used to having new dishes. If I repeat a dish in a week or so he will be like “Mummy roz roz ek hi khana” – “Mummy, Everyday the same dish”. So to make sure that he doesn’t get bored with the food I prepared bhindi roll and poha. Let me share with you how I brought the twist.

So for Lunch – Bhindi (Ladyfinger) Roll
This time I just changed the style of slicing bhindis. The bhindis were thinly sliced and with that I also used thinly sliced onions. Rest the recipe was same as was shared in my previous blog (link shared below).
But trust me this simple change in way I sliced it brought a lot of change in the taste and my kid went all gaga over it.
For Snacks – Peanuts Poha (Flattened Rice) and thinly sliced Apples
- Poha (thoroughly rinsed and strained) – 1 cup
- Onion (finely chopped) – 1
- Potato (finely chopped) – 1
- Carrot (finely chopped) – 1
- Tomato (finely chopped) – 1
- Ginger (grated) – 1 tsp
- Curry leaves – 8 to 10
- Green Chilli (slit) – 1
- Coriander leaves – a handful
- Salt to taste
- Black Pepper Powder – 1 tsp
- Red Chilli Powder – 1/2 tsp
- Turmeric Powder – 1 tsp
- Coriander Powder – 1 tsp
- Roasted Cumin Powder – 1/2 tsp
- Roasted Peanuts – 1 tbsp
- Lemon Juice – 1 tsp
- Powdered Rock Sugar – 1 tsp
- Black Salt – 1 tsp
- Mustard seeds – 1 tsp
- Fennel seeds – 1/2 tsp
- Mustard Oil – 1 tbsp
- Heat a pan and add mustard oil.
- Let it heat properly then lower the flame and add mustard seeds and fennel seeds.
- Once they begin to crackle, add curry leaves, green chilli and ginger paste.
- Sauté and add onion, potato and carrot. Add salt and turmeric powder and cover and cook till the vegetables are little soft.
- Once done add tomato and mix well. Cook it for 2 minutes and then add all the spices except sugar and lemon juice.
- Cook the spices for a minute and then add 1 tbsp of water. Mix everything well.
- Add roasted peanut and gently mix everything.
- Add poha, salt, lemon juice, sugar and coriander leaves.
- Mix everything on a low flame and then switch off the flame and cover and let it rest for 2-3 minutes.
- The yummy and healthy poha is ready for your breakfast and also for your kids snack box.
