Happiest are mothers when they see their kids empty lunch box. My son thoroughly enjoyed yesterdayβs tiffin and that is enough of a motivation to give me the kick to wake up early and come with some new tiffin ideas again. So here I am again with another tiffin box idea.π

One box of fruits- Diced Pears. I squeeze a few drops of lemon on top and mix it gently so that it does not changes its colour.
For Lunch – Paneer Pulao with Buttermilk
The quantity mentioned are for 2-3 people as my husband also prefers the same lunch box for his office.ππ
For Pulao
Rice – 1 cup
Mustard Oil – 1tbsp
Cumin seeds – 1 tsp
Ginger (grated) – 1/2 inch
Paneer (diced into cubes) – 100 gms
Onion – 1 (half finely chopped and half into cubes)
Capsicum (diced into cubes) – 1/2 (as I had a big one)
Tomatoes (diced into cubes) – 2
Salt to taste
Turmeric Powder – 1/2 tsp
Black Salt – 1 tsp
Black pepper powder – 1 tsp
Garam masala – 1/2 tsp
Coriander leaves for garnishing
- On a vessel pour good quantity of water and heat it.
- Add the washed (at least thrice) rice and cook it till the rice are soft. Do not overcook it.
- Strain and keep it aside. I kept a small bowl of boiled rice separate so I can make some sweet.
- Heat a pan and add mustard oil.
- Once the oil is hot, add cumin seeds and let it crackle.
- Add grated ginger, onion, capsicum and paneer.
- On a medium flame, cook till onion turns pink and the paneer looks brown.
- Add salt and turmeric powder and cook for a while.
- Add tomatoes and stir for a few seconds.
- Sprinkle some black salt and black pepper powder and keep stirring.
- Then add in the boiled rice and sprinkle some salt, garam masala and coriander leaves.
- Give a gentle toss and the delicious pulao is ready.
For Buttermilk
Curd – 2 tbsp
Rock salt – 1/2 tsp
Cumin powder – 1/2 tsp
Pudina powder – 1 tsp
Hing a pinch
Water – 1/2 glass
Blend everything together and there you go. I added some ice cubes as well so that it is at least at normal temperature by the time my son has his lunch.
For Snacks – Sweet Rice and Frams
For Sweet Rice
Boiled Rice – 1 bowl
Ghee/Clarified Butter – 1 tsp
Raisins – a handful
A pinch of Salt
Jaggery Powder – 2 tbsp
Chopped and Soaked Almonds
Heat a pan and add ghee.
On a low to medium flame, add raisins and fry till they rise.
Add the boiled rice and stir everything.
Add a pinch of salt and jaggery powder. Mix and cook for a while.
The Sweet Rice is ready. Garnish with some almonds.
*I soak almonds everyday as this is the first thing we have in the morning. But today my kid did not want to have it so I used that in garnishing.
Frams I bought from the store. I just fry it whenever I get time and keep it in an airtight container.
